The “Alessio Guardone” family-runned farm is specialized in the production of high quality extra virgin olive oil. The farm was born from the union of family land, cultivated for generations, and the recovery of abandoned land. Our olive groves are located in Conna, in the hills of western Liguria, between the Mediterranean Sea and the Maritime Alps. Over 1,000 Taggiasca olive trees D.O.P. (or P.D.O.) certified, cultivated in the characteristic terraces, called fasce, between 200 and 300 meters above sea level.

We are committed to preserve the typical Ligurian territory. We give back value to secular plants, which have become unproductive following the abandon of rural areas, we maintain the terraces reconstructing the traditional dry stone walls and we use only treatments allowed in organic farming. Our high quality extra virgin olive oil is produced respecting nature and the fertility of the earth and taking care of the production cycle in all its aspects.

Taggiasca olive tree is the soul of the western Liguria countryside, a millenary history beginning with the Benedictine friars, who in the seventh century started the construction of the terraces and the cultivation of the olive tree. A majestic plant, able to reach 15 meters in height and to live and produce for centuries, characterized by a great vigor and by a gradual maturation of the fruits that requires harvesting from November to early March. Its distribution on the Ligurian territory, its place of origin, goes from Andora to Ventimiglia.

The production of Galé Extra Virgin Olive Oil takes place exclusively with cold pressing, using only olives abbacchiate (olives manually beated down from the trees with pneumatic harvest) that are grinded within 24 hours of harvesting using the most modern technologies. In this way we obtain a very high quality Extra Virgin Olive Oil, characterized by a very low acidity, with a fresh and fruity flavour, with hints of raw artichoke, but also intense and spicy and with a colour ranging from an intense green to a golden yellow.
